  • 450 g Pigeon
  • 150 ml thin soy sauce
  • 50 ml thick soy sauce
  • 15 ml Cooking wine
  • 20 g Crystal sugar
  • 270 ml water
  • ginger 4-5 pieces



  • Wash pigeons to remove internal organs
    Put cold water into the pot and blanch it
  • Prepare the sauce while waiting

    Dry at approximately 50 ℃/100 ℉ for about 30 minutes

  • Pigeon back up
    Adjust the temperature to 150 ℃/300 ℉ and bake for 15 minutes
    Bake at 200 ℃/400 ℉ for 5 minutes again
    Keep the temperature constant, flip over and bake for 3 minutes
