Ingredients

  • 250 g potato
  • 25 ml thin soy sauce
  • 50 ml chili oil
  • 5 ml sesame oil
  • 5 g white sugar
  • 5 ml pepper oil
  • chicken essence right amount
  • 5 ml vinegar
  • 5 g garlic
  • salt right amount
  • 10 g shallot
  • 10 g White sesame

Instructions

  • Remove the skin of the potatoes, wash them, and cut them into slices of the right size, as thin as possible, or rub them into slices with a tool.
  • Rinse the surface starch of potato chips with clean water and immerse them in clean water to prevent discoloration.
  • Heat an appropriate amount of water in a pot, add the potato slices and cook, being careful not to cook too soft.
  • Take out the boiled potato slices, immediately soak in ice water to cool, then remove and drain, mix well with seasonings, put on a plate, and sprinkle with chopped green shallot and white sesame seeds.

Notes

1. When cutting potato slices, cut them as thin as possible, and the thickness should be even, otherwise the taste will be inconsistent when cooked.
2. Immerse the cooked potatoes in ice water immediately to make them crispy and tender.
3. The cut potato chips will oxidize and change color if they are not cooked right away, so they can be immersed in water to prevent color change.
